I was watching the food network a couple of weeks ago and want to try this recipe. I can't find it anywhere on the internet. First you fry bacon in a pan and add a bunch of squash and zucchini. Then you cook noodles and somehow make a white sauce. You add all the ingredients together. I have no clue how to make a white sauce that will go well with this. Any ideas would be greatly appreciated!
White sauce is very simple and it gets its flavor from the other ingredients
2 Tbsp. butter
2 Tbsp. flour
1 cup milk
dash salt
dash white pepper
sounds like a primivera. In that instance, I would not make a roux based sauce. I would use about 3/4 - 1 cup cream.
Fry bacon
Remove bacon
Remove most grease (or all grease and replace with butter or olive oil). The bacon fat is very flavorful but not very healthy, Traditionally you would use the bacon fat but that is your decision.
Quickly saute the Zucchini
Add the cream while the zucchini is still hard and reduce for a few minutes
Add about 1/2 cup parm cheese
add pasta and toss
Top with reserved bacon
Serve with more parm at the table
